For a breast about 2 cm thick. Flip halfway, then rest 5 minutes before slicing.

Times by thickness

Thickness matters more than weight, because heat has to travel to the centre. Measure the thickest point with a ruler or the side of a tablespoon.

ThicknessTemperatureTime
About 1 cm (½ in), pounded or cutlet190°C / 375°F12–15 min
About 2 cm (¾ in), typical 170–225 g breast190°C / 375°F18–22 min
About 3 cm (1¼ in), large breast180°C / 360°F24–30 min
Frozen, about 2 cm190°C / 375°F25–30 min

For very thick breasts, the lower temperature gives the centre time to catch up before the outside dries.

Step by step

  1. Even it out. If one end is much thicker, cover the breast with plastic wrap and press it to an even thickness with a pan or rolling pin.
  2. Oil and season. Rub with about ½ teaspoon of oil per breast, then season both sides.
  3. Preheat to 190°C / 375°F.
  4. Cook smooth side down first for half the time, then flip.
  5. Check early. Test at the low end of the range in the thickest part.
  6. Rest 5 minutes on a plate before slicing so the juices stay inside.

Keeping it juicy

Dry chicken breast is almost always overcooked chicken breast. The safe temperature is 74°C / 165°F, and every degree above that pushes out more moisture. Pull it out as soon as the thickest part reads 74°C. A quick brine also helps: stir 1 tablespoon of salt into 1 litre of water, soak the breasts for 30–60 minutes in the fridge, then rinse and pat dry. Skip extra salt in the seasoning if you brine.

Cooking from frozen

You can air fry a frozen breast, but the outside can overcook while the centre catches up. Separate breasts that are frozen together, rinse off any ice, and season after the first 10 minutes when the surface has thawed. Always check the centre with a thermometer. Thawing overnight in the fridge gives a juicier result.

Questions people ask

Why is my chicken breast rubbery?

Usually overcooking, or a very thin piece cooked at too high a heat. Lower the time for thin cutlets.

Can I bread chicken breast in the air fryer?

Yes. Use a dry coating such as panko, and spray it lightly with oil so it browns.

Is pink chicken undercooked?

Not necessarily. Colour isn't reliable. If it reads 74°C / 165°F, it's safe.
